Asafoetida:

Asafoetida has a pungent smell, as reflected in its name, lending it the trivial name of “stinking gum”. The species are native to the deserts of Iran and mountains of Afghanistan where substantial amounts are grown.

Asafoetida is a plant sap that comes out of the neck of the plant by cutting the root or the bottom of the stem, It is obtained during the summer and is available in the market in two types. A type called Asafoetida Eshki is very clean, free of dirt and dust also in high quality. Its external color is reddish yellow or brown, smooth and transparent. In terms of dimensions, it is about the size of a hazelnut, bigger or smaller. The color of its root is white, which quickly oxidizes and darkens in vicinity of air. The other type that is sold in the market is called lump that is collected carelessly and mixed with soil, straw and leaves, also has poor quality. The taste of Asafoetida is bitter and in some species it has a smell similar to garlic, stinky and spicy.
